Il a d\u00e9but\u00e9 sa carri\u00e8re en 1982 et, apr\u00e8s s\u2019\u00eatre form\u00e9 dans des \u00e9tablissements embl\u00e9matiques, a \u00e9t\u00e9 sacr\u00e9 Meilleur Ma\u00eetre d\u2019H\u00f4tel du Monde en 2010. Fondateur de l\u2019association \u00d4 Service, il a consacr\u00e9 sa vie \u00e0 valoriser et \u00e0 transmettre les m\u00e9tiers de salle. Auteur de plusieurs ouvrages sur l\u2019hospitalit\u00e9 et le leadership, son approche allie exigence, p\u00e9dagogie et humanit\u00e9.
